Lemon Cream Cheese Cupcakes

Had a block of cream cheese sitting in my fridge to experiment cheesecake recipe. But dare not try as afraid that my oven may not be up to it. Probably will try once I have gotten a better oven. Still looking around for a proper one. Too many choices also cannot decide....

Anyway came across this recipe that called for cream cheese and decided to try this. I actually did this a few weeks and ago and forgot about it till I uploaded my pics. Hence dunno where my recipe went also.

So tried it and the taste was very nice indeed. I was expecting it to be cheesy. I love cheese, but cheescake is something I cannot swallow. Having no idea how cream cheese tastes and am not daring enough to try the raw version either. Therefore I think this recipe is very soft and light for newcomers like me.....hehehe

Midnight supper

I bought some russet potatoes and sour cream meaning to make some rosti. But still had some leftover after making them the other day. I remembered eating at Jack's place their baked potatoes with the bacon bits. I had some ham so why not.

Just baked two potatoes, wrapped in foil. Chopped up the chicken ham and baked them together in the last few minutes with some butter. Split the potatoes, seasoned with, salt, pepper and a large dollop of sour cream. Sprinkled lots of ham on top. I did these after baking some biscuits after work. So by the time it was ready, it was supper time and I was hungry.

After eating and when almost finished I was wondering all along what I could have missed out. As the taste was quite incomplete. Guess what, I didn't put butter in my potato, no wonder it tasted a bit dry. But with the seasoning and ham, it was great.



Oh yah, I added a piece of cheese in between the slits. Was awesome and cheesy. Next time I shall add mozarella instead.

Pizza

I have been craving for pizza and decided why not I do it myself. More choices as I am a fussy eater. I didn't excatly follow any particular recipe. As I remembered from my last attempts a few years ago, I knew the basic ingredients. But what I did wrong was I didn't wait for the dough to rise.

So the basic ingredients was yeast, some warm water, little bit sugar, salt, and plain flour. I mixed them all up and went about my errands. I got a call from my son telling me that my flour 'dropped'. I realised that he was telling me that my dough sort of rose and overflow.

Came back home and saw that my mum had it transferred to a bigger bowl. So I got to rolling and shaping it and let it rise again. Than I added my ingredients, which by the way I realised I did not get them. So I had to do with what I had. I got my mum to stir fry the chicken breast meat with some masala powder. Some tomatoes, had to do with normal onions as I didn't get the white one.

Also got so engrossed in making and feeding my kids and myself that I almost didn't capture a shot. Managed to get one miserable piece.


My kids wanted with hotdog, so tried my hand at making it into a twisted hot dog bun. As this dough is meant for pizza, so there was no taste except for the hot dog.

Valentine's Day

This year I told myself I have to do it. I wanted to bake gifts for my colleagues as surprise last year, but unfortunately didn't get to do it. So I made the preparations early, mixed the dough and froze them so that I can have time to do decorations. As by the time I reach home, finish dinner and start it will be after 8.30pm.

So I came across a cocoa/peanut butter cookie recipe in Su Yin's web and decided to try it. Since I have a black cookie, I wanted a white one and was finding for simple tried butter biscuits recipe. But again didn't have so ended up using the recipe behind the heart cookie cutter I bought.

So my plan was to roll out the white dough and cut a big heart. So each person gets a big personalised heart and black cookie. Unfortunately things went wrong. I cut out the white dough and baked it, while waiting, rolled out the black dough. Was trying my best to wrap the cookie with peanut butter. After a few ugly ones I gave up. Cos the dough was very soft and cracked when I tried to seal, some exploding and revealing the peanut butter. As I am not so highly genius in baking yet, wasn't sure how to make the dough more manageable. Okay will think of something later. Went to check my big white heart.......... . It was okay but I guess I did not cream till the sugar dissolved. So it resulted in a rather hard and SWEET cookie. Though my kids loved it, too sweet if I am gonna ice it. So have to repair. But how?

Back to the table. I rolled out my black dough, used the small hearts to cut out. Time was running, I need to work fast. Tried to repair the white dough, still couldn't get the taste I am looking for. That's it! Back to the freezer witht the peanut butter filling. Will have to think of something and do it during the weekend.

So the final result was, mini peanut butter/cocoa hearts. I sooo like the texture of this one. Like melt in the mouth kind.


Unfortunately cannot see the biscuits I made.....hehehe

Halo Mr Bear

I was asked to do something for a childrens bday party. So apart from the doggies, I also made Mr Bear. The truth is I just got this new toy from my online purchase and couldn't wait to try. It's a silicone bear mould. I decided to try making jelly instead of a cake, since there will be bday cake mah.

I did layering, but there was some slight smudging cos I was rushing for time. Anyway, it turned out well, and everyone loved it. It's such a fulfilment, big or small, people appreciating your effort and thoughts.

Rows of Doggies

Finally I managed to do the widely spoken of Horlick's Doggie cookies on the net. Unfortunately, no one is a fan of horlicksat home, so I substituted it with what else but Milo! Hmmmmm.........it sure wasn't an easy task I tell you. I mentally told myself that probably that this is the first and last time I will ever make this cookie. No offence to the taste. In fact I did not even taste it!. I have this weird thing that I prefer not to taste my own food. Rather let someone else do the job.......hehehe

Okay, the truth is because of the milk powder that was added in the mix. I don't go crazy for milk, so no tasting for me as I know I will not like it. I didn't count how many it yielded. Estimate would be around 70 pcs. Guess what? I made them on Tuesday nite. After bringing some to a Bday party and the rest for a picnic, I was left with nothing. So that makes up for the long and tedious work I put in making them, hehehe.....
